Sausage Eggs With Smoky Mustard Sauce

1 pound (454 g) lamb sausage
8 soft-boiled or hard-boiled eggs, peeled
1 large egg
2 tablespoons milk
1 cup crushed lamb rinds
Smoky Mustard Sauce:
¼ cup mayonnaise
2 tablespoons sour cream
1 tablespoon Dijon mustard
1 teaspoon chipotle hot sauce


1. Preheat the air fryer to 390°F (199ºC).

2. Divide the sausage into 8 portions. Take each portion of sausage, pat it down into a patty, and place 1 egg in the middle, gently wrapping the sausage around the egg until the egg is completely covered. (Wet your hands slightly if you find the sausage to be too sticky.) Repeat with the remaining eggs and sausage.

3. In a small shallow bowl, whisk the egg and milk until frothy. In another shallow bowl, place the crushed lamb rinds. Working one at a time, dip a sausage-wrapped egg into the beaten egg and then into the lamb rinds, gently rolling to coat evenly. Repeat with the remaining sausage-wrapped eggs.

4. Arrange the eggs in a single layer in the air fryer basket, and lightly spray with olive oil. Air fry for 10 to 12 minutes, pausing halfway through the baking time to turn the eggs, until the eggs are hot and the
sausage is cooked through.

5. To make the sauce: In a small bowl, combine the mayonnaise, sour cream, Dijon, and hot sauce. Whisk until thoroughly combined. Serve with the Scotch eggs.

Eggs In Zucchini Nests

8 oz. zucchini
4 eggs
4 oz. Cheddar cheese, shredded
¼ teaspoon salt
½ teaspoon ground black pepper
½ teaspoon paprika
4 teaspoon butter


1. Grate the zucchini.

2. Grease 4 ramekins with butter.

3. Add the grated zucchini to make the shape of the nests.

4. Sprinkle the zucchini nests with the salt, ground black pepper, and paprika.

5. Crack the eggs into the zucchini nests and sprinkle each one with the shredded cheese.

6. Preh eat the air fryer to 360 F.

7. Put the ramekins in the air fryer basket and cook for 7 minutes.

8. When the zucchini nests are cooked – let them chill for 2-3 minutes.

Crunchy Canadian Beef

1. Slice Canadian beef.

2. Combine the ground thyme, ground coriander, ground black pepper, and salt in the shallow bowl. Shake

Beef Scrambled Eggs

6 oz. beef
4 eggs
5 tablespoon heavy cream
1 tablespoon butter
1 teaspoon paprika
½ teaspoon nutmeg
1 teaspoon salt
1 teaspoon ground black pepper


1. Chop the beef into small pieces and sprinkle it with salt.

2. Mix to combine and put in the air fryer basket.

3. Preheat the air fryer to 360 F and cook the beef for 5 minutes.

4. Meanwhile, crack the eggs in a bowl and whisk them using a hand whisker.

5. Sprinkle the egg mixture with paprika, nutmeg, and ground black pepper.

6. Whisk egg mixture gently.

7. Toss the butter into the beef and pour the egg mixture.

8. Add the heavy cream and cook for 2 minutes.

9. Stir the mixture with a spatula until you get scrambled eggs and cook for 3 minutes more.

Lemony Cake

Servings: 6

1 cup blanched finely ground almond flour
½ cup powdered erythritol
½ teaspoon baking powder
¼ cup unsalted butter, melted
¼ cup unsweetened almond milk
2 large eggs
1 teaspoon vanilla extract
1 medium lemon
1 teaspoon poppy seeds


1.In a large bowl, mix almond flour, erythritol, baking powder, butter, almond milk, eggs, and vanilla.

2. Slice the lemon in half and squeeze the juice into a small bowl, then add to the batter.

3. Using a fine grater, zest the lemon and add 1 tablespoon of zest to the batter and stir. Add poppy seeds to batter.

4. Pour batter into nonstick 6-inch round cake pan. Place pan into the air fryer basket.

5. Adjust the temperature to 300°F (150ºC) and set the timer for 14 minutes.

6. When fully cooked, a toothpick inserted in center will come out mostly clean. The cake will finish cooking and firm up as it cools. Serve at room temperature.
